Introducing my No-Bake Energy Bites – not just a snack, but a little burst of yum for all you nursing moms out there. Packed with good stuff like oats, flaxseed, and brewer’s yeast, these bites are here to give you a snack that is both delicious and nutritious. Brewer’s yeast is a rich source of minerals — particularly selenium; protein; B vitamins, and chromium which are essential for optimal milk production in lactating women.
Whether you’re navigating the beautiful chaos of motherhood or just in need of a treat, you won’t want to skip on trying these simple yet delightful bites that’ll have you reaching for seconds.
Ingredients:
- 1 cup old-fashioned oats
- 1/2 cup ground flaxseed
- 1/4 cup brewer’s yeast
- 1/2 cup nut butter (such as almond butter or peanut butter)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped nuts (such as almonds or walnuts)
Instructions:
- Mix Dry Ingredients: In a large bowl, combine oats, ground flaxseed, brewer’s yeast, and ground cinnamon. Most of these ingredients are believed to help boost milk production.
- Add Wet Ingredients: Add nut butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix well until all the ingredients are evenly combined.
- Fold in Extras: If you use chocolate chips or chopped nuts, fold them into the mixture. These ingredients add flavor and texture to the bites.
- Shape into Bites: Roll small portions of the mixture into bite-sized balls. You can make them as big or as small as you prefer. Don’t forget to sneak in a bite or two… I mean *someone* needs to taste test it. 😉
- Store: Place the bites on a parchment-lined tray or plate and refrigerate for at least an hour before transferring them to an airtight container. Store them in the refrigerator for a longer shelf life.
